Ingredients:
- 3 free-range eggs
- 150g prunes
- 100g almonds (peeled and toasted)
- 1kg lamb
- 1/2 cup olive oil
- 2 onions(gently exfoliated)
- 1 tsp ground ginger
- 1 tsp clarified butter
- 1/2 tsp black pepper
- 3 cinnamon sticks
- A pinch of saffron soaked in a cup of water
- 1 tsp salt (or more to taste)
- 2 peeled garlic cloves
- 1 tsp cinnamon
- 1 tsp turmeric

Ingredients:
step1: Seasoning the meat
Take a small bowl and add half a cup of saffron soaked in water. Then add a teaspoon of ginger, a teaspoon of turmeric, half a teaspoon of black pepper, and a teaspoon of salt. Mix this well. Place the meat in a glass container and pour the spice mixture over it. Mix well and leave it for half an hour to allow the flavors to meld.

Then we wash 150g of prunes and place them in a cooking pot. We add water to cover them, add a little salt and a teaspoon of cinnamon, turn on the stove, cover the pot, and let it cook until tender. We then pour over three tablespoons of honey and let it simmer for about 20 minutes, until the honey has thickened. After the honey has cooked through, we leave the well-cooked prunes to cook until ready to place them on top of a tagine.

We return to the tagine after checking it and add water if needed. We place the candied prunes on top, then add the sweetened broth they were cooked in to flavor the tagine. We cover the tagine for 5 minutes, then turn off the heat once we are sure the tagine is cooked thoroughly.
