Ingredients:
- 500g of thin vermicelli (a type of thin pastry)
- 1 teaspoon salt
- 70g of premium yellow raisins cooked in water
- 100g caster sugar
- 50g ground cinnamon
- 50g crushed almonds
- One tablespoon of butter
- Three tablespoons of vegetable oil

Instructions:
step1:
We put 500g of vermicelli (saffa) and put a tablespoon of oil in it and stir it well until all the noodles are coated with oil (so that they do not stick while cooking). We put them in the steam cooking pot. When the steam starts to rise, take a pot with hot boiling water and pour it on top evenly and let it drip from the hot water that you emptied.
Empty it from the steamer into the pot, rub it and break it up with a fork and leave it for a minute.
When it has cooled slightly, add a tablespoon of vegetable oil. Stir it well until the grains blend with the tablespoon of oil. Return it to the couscous to complete its steam cooking for 5 minutes from the moment the steam begins to rise.

step2:
After the 5 minutes shown in step 9 above in the image, pour hot water over the noodles from above as before. Let the water drain off, then put the noodles back into a bowl and add a teaspoon of salt. Stir and fluff them with a fork, then add a tablespoon of oil and stir well until the oil is evenly distributed. Let them rest for about half a minute, then return them to the steamer for 20 minutes from the moment the steam starts rising. Cover the steamer and check the noodles. If they are well cooked and fluffy, they are ready. Remove them from the steamer, place them in a bowl, rub them well, and then transfer them to a serving dish.

step3:
Take the dish containing the well-cooked steamed vermicelli and add 70g of well-cooked raisins. Add a tablespoon of butter and mix well. Then, expertly place the mixture in the center of the dish. Top with 50g of crushed almonds and drizzle with powdered sugar in lines from top to bottom. Similarly, drizzle ground cinnamon in lines from top to bottom, between the sugar lines. Do not use all the cinnamon and sugar at once; leave some on the table for anyone who needs it.

Frequently Asked Questions (FAQ)
1. What is Moroccan Seffa?
Moroccan Seffa is a traditional Moroccan dish made with steamed fine vermicelli (or sometimes couscous), layered with butter and raisins, then beautifully decorated with powdered sugar, ground cinnamon, and crushed almonds. It is commonly served during family gatherings, celebrations, and special occasions.
2. Is Seffa served as a main dish or a dessert?
Seffa can be enjoyed as either a sweet main course or a dessert. In Morocco, it is often served after savory dishes during festive meals, but many families also enjoy it as a comforting main dish.
3. Can I use couscous instead of vermicelli?
Yes. Traditional Moroccan Seffa can be prepared with either fine vermicelli (Chaariya) or steamed couscous. Both versions are authentic and widely enjoyed throughout Morocco.
4. Why is the vermicelli steamed several times?
Multiple steaming sessions are the secret to achieving light, fluffy, and perfectly separated vermicelli. This traditional Moroccan technique ensures the noodles absorb moisture evenly without becoming sticky.
5. Can I prepare Seffa in advance?
Yes. You can steam the vermicelli and prepare the raisins ahead of time. For the best presentation, add the powdered sugar, cinnamon, and crushed almonds just before serving.
6. What type of raisins should I use?
Premium white or golden raisins are traditionally preferred because they become soft, juicy, and naturally sweet after cooking, perfectly complementing the vermicelli.
7. Can I reduce the amount of sugar?
Absolutely. You can adjust the powdered sugar to suit your taste or use less while keeping the traditional decoration with cinnamon and almonds.
8. Is Seffa vegetarian?
Yes. This version of Moroccan Seffa is vegetarian since it contains vermicelli, butter, raisins, almonds, sugar, and cinnamon. If using vegetable-based butter, it can also be adapted for different dietary preferences.
9. What is the best way to serve Moroccan Seffa?
Serve Seffa warm on a large Moroccan serving platter. Traditionally, extra powdered sugar and ground cinnamon are offered separately so each guest can adjust the sweetness to their preference.
10. How should leftover Seffa be stored?
Store leftover Seffa in an airtight container in the refrigerator for up to 2–3 days. Reheat it gently by steaming or warming it lightly before serving, then add fresh powdered sugar and cinnamon if needed.
11. Can I add other toppings?
Yes. Many Moroccan families customize Seffa with toasted almonds, walnuts, dates, or a light drizzle of honey while preserving its traditional presentation.
12. What drinks pair well with Moroccan Seffa?
Moroccan Seffa pairs beautifully with fresh Moroccan mint tea, warm milk, or lightly sweetened herbal tea, making it a comforting dish for family meals and festive occasions.
