Ingredients:

  • 1 grated tomatoes(Red and ripe)
  • One large onion, finely chopped
  • Two tablespoons of olive oil
  • One tablespoon of chopped coriander and parsley
  • A pinch of turmeric, a pinch of black pepper, and a pinch of paprika.
  • Four free-range eggs
  • Salt to taste
  • One teaspoon of cumin
  • 40g of grated cheese

Instructions:

Take a frying pan and place it over the heat. Add three tablespoons of olive oil, then add the onion and let it brown in the oil for 5 minutes. Add the grated tomato and let the pan cook for 8 minutes, stirring occasionally. Then add a pinch of salt, a pinch of turmeric, a pinch of paprika, chopped coriander, and chopped parsley. Stir well for 2 minutes. Crack four eggs into the pan, cover, and let it cook for 7 minutes over the heat. Finally, add the grated cheese, a sprinkle of the ground spice mix on top, and a tablespoon of olive oil.
