  • 1 kg (2.2 lb) fresh sardines, cleaned and gutted
  • 2 medium onions, sliced
  • 3 medium carrots, peeled and cut into thick rounds
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh cilantro
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground cumin
  • ½ tsp ground turmeric
  • ½ tsp ground ginger
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper or chili flakes (optional)
  • Salt, to taste
  • 1 preserved lemon, cut into wedges (optional, for authentic Moroccan flavor)
  • Lemon wedges, for serving

Instructions:

Marinate the sardines in a bowl with a tablespoon of olive oil, garlic, preserved lemon, paprika, ground cumin, turmeric, ground ginger, black pepper, and optional chili flakes. Add half a peeled preserved lemon. Use only half of these spices. For the remaining chopped parsley and cilantro, add the entire quantity to the marinade.
