Ingredients:

  • A handful of mallow, well washed and finely chopped
  • One finely chopped onion
  • Half a preserved lemon, cut into small pieces
  • Half a regular lemon, cut into small pieces
  • 4 cloves of garlic, finely chopped
  • 1 tablespoon chopped cilantro
  • 1 tablespoon chopped coriander
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon harissa
  • 1/4 cup olive oil
  • 1/2 cup water

Instructions:

Take a pot and put in the chopped onion, then add the chopped mallow, then add half a chopped pickled lemon and half a regular lemon, then add two tablespoons of chopped coriander and parsley, then add a quarter cup of olive oil, then add half a cup of water, then add a teaspoon of salt, a teaspoon of cumin, a teaspoon of paprika, and a teaspoon of harissa. Stir the ingredients well, then cover the pot and leave it on low heat. When its volume has reduced, add 40g of red olives. Leave it on the heat for a little while without covering the pot until the water evaporates. Then serve it in a dish, professionally arranging lemon slices and red olives on top.

You can serve this recipe as a salad in small bowls alongside a main dish such as a Chicken tagine with zucchini and onions for lunch or dinner.
